My made up recipe for Tomato soup and Grilled Cheese!
Soup (serves 2)
5-6 medium tomatoes or 4 large tomatoes
1 cup of carrots (cooked and cut up)
2 cups of fresh spinach
1/4 onion, chopped
2 garlic cloves, chopped
1 tbspoon of olive oil
1/2 tsp of dried chopped basil
salt and pepper to taste
If you like a little spice - 1/4 tsp of ground red pepper
Cut tomatoes in fourths, and roast in oven for 10 minutes. Saute onion, garlic, and spinach in olive oil. Puree tomatoes, spinach-onion-garlic mixture, and carrots in a blender or food process. Pour in sauce pan and add one cup of water, basil, salt and pepper. Bring to a boil and then simmer covered for 20 minutes.
Grilled Cheese (serves 2)
4 slices of bread
Olive Oil
4 - 6 slices of cheddar cheese (depending on the size of your cheese, enough to make two layers of cheese)
Fresh spinach
Spray skillet with pam or olive oil.
Put on medium-low heat.
Place two pieces of bread on skillet and brown on one side. Take bread off the skillet and put the other two on, while other bread is browning, add cheese, spinach, then cheese to the first bread. Remove the other two pieces of bread and put your first sandwich back on the skillet. Flip after one side is browned. Repeat with second sandwich. You may have to spray more olive oil to pan.
Enjoy sandwich with tomato soup!
