Last night we had a pretty yummy dinner, if I do say so myself! I made brown rice, meatloaf and sweet potatoes.
Here is my recipe for the meatloaf (Adapted from Deceptively Delicious):
1 pound of lean ground meat (I used turkey)
4-6 tomatoes (quartered)
1/2 onion (coarsely chopped)
2-3 garlic cloves (coarsley chopped)
5 slices of 100% whole wheat bread, toasted and crumbled
2-3 carrots (peeled and grated)
1 cup grated cheddar cheese or 1/2 cup of grated parmesan cheese
1 cup of spinach
salt and pepper to taste
4 slices of nitrate and nitrite free bacon
1. Saute onion and garlic in 2 Tbs. of EVOO until tender. Add tomatoes and cook a little more. Empty pan into a blender, including the juices, and add the spinach. Blend until you have a thick sauce (you may need to add a little water).
2. Mix meat, sauce, carrots, cheese, bread crumbs, salt and pepper together. If too moist add more bread crumbs, if too dry add milk.
3. Spread meat mixture evenly into a large casserole dish. Bake covered for 30 minutes at 400 degrees. Remove lid and bake an additional 15 minutes or until completely cooked.
Sweet potato:
*Scrub sweet potatoes
*Rub EVOO over sweet potatoes
*Knife or fork sweet potato all over
*Wrap loosely in foil
*Bake at 400 degrees for 45 - 60 minutes.
*Remove from foil. Mash with fork (I include skin) and add a little bit of butter, brown sugar and cinnamon.
*Save leftover sweet potatoes for sweet potato pancakes for breakfast the next morning!
Sweet Potato Pancakes (makes 9 medium pancakes):
1 cup Whole-wheat flour
2 tsp baking powder
1 T Brown sugar
1 cup Buttermilk
2 tsp extra-virgin coconut oil or melted butter
1 egg
1/2 c pureed or mashed sweet potato
Mix all together and cook on large buttered skillet. Serve with warm maple syrup.
